INGREDIENTS
150g plain flour
1 tsp baking powder
½ tsp baking soda
1 tbsp caster sugar
Pinch of salt
1 large egg
200ml buttermilk
2 tbsp unsalted butter, melted
1 ripe banana, sliced
4 tbsp Mellori Salted Caramel, warmed
Pinch of flaked sea salt to finish
INSTRUCTIONS
STEP 1
Whisk together the flour, baking powder, baking soda, sugar, and salt in a large bowl.
STEP 2
In a separate bowl beat the egg, buttermilk, and melted butter together until combined.
STEP 3
Pour the wet ingredients into the dry and fold gently until just combined — do not overmix, a few lumps are fine.
STEP 4
Heat a non-stick pan over medium heat with a small knob of butter. Pour in ladlefuls of batter and cook for 2–3 minutes until bubbles appear on the surface, then flip and cook for 1 minute more.
STEP 5
Stack the pancakes high on a plate and arrange fresh banana slices over and around the stack.
STEP 6
Warm the Mellori Salted Caramel gently and pour generously over the top of the stack, letting it drip down the sides. Finish with a pinch of flaked sea salt.
